Virtually a national food in street-snack form in El Salvador, the pupusa is a Central American corn-flour pancake made with masa harina, and stuffed with beans, cheese and pork, and sometimes a Central American veg called loroco. With some cortido, a coleslaw variant, and some zippy tomato salsa, pupusas make a very good and inexpensive snack. There are several places in Waterloo Region, and especially Kitchener, making the treat.

The pupusa cook shapes the corn flour into a little ball, makes an indentation in it and stuffs it before flattening it and shaping it into a pancake. The pupusa is grilled, often with little or no oil, to a golden-brown colour. Pupusas are traditionally served with a thin tomato salsa and curtida, a carrot and cabbage coleslaw.
